When I consider the current prices of beef, it seems a shame to let all that venison go to waste.

Because you haven't contemplated the cost. There's a reason you never saw deer drives in the old Hollywood westerns.

We have a huge deer problem here in NC. Partly from growth, but also from stupid people, making stupid rules about subjects they don't understand. This animal management is a prime example.
My wife has a friend whose husband is dying from Lyme Disease. He used to be a senior engineer at IBM, now he can't remember how to tie his own shoes. People just don't get how bad this disease is and even when they hear, deer tick, they don't get it.
This man was not a hunter or camper, they think he picked up the tick in a local nature park. One where the deer come to feed. But one where it's illegal to hunt, because the deer are pretty to look.
We have too many raccoon too. They're not as tasty.
