That’s just how humans roll… when we don’t understand something, we create an arbitrary metric, then pretend we do.
Understanding things fundamentally when they are dynamic systems is really difficult. In those cases it’s often better to step back and not focus on any metric.

Having worked in a dairy processing plant: We have ‘Expiration Codes’ so we can identify a given production group of food for recall purposes. There were also ongoing culture tests to check for contamination that had a secondary effect of giving a rough guess on the shelf life of a given lot.
Pity that the consumer group hysteria won’tallow them to irradiate products, other than some spices…
